Dad’s Caramel Acorn Squash
1 acorn squash, peeled and sliced in ½ inch slices
1 tablespoon of ghee or Kerrygold unsalted butter
1 teaspoon Old bay seasoning
1 teaspoon lemon pepper
1 teaspoon coconut sugar
In a skillet over medium heat melt Ghee or Kerrygold unsalted butter with seasonings, blend together until bubbling.
Once melted and ghee/butter is bubbling add acorn squash and let caramelize on each side. Cover for about 2-3 minutes to soften and remove lid remainder of cooking time.
