Broccoli and Roasted Sweet Corn Salad

Finding healthy, good tasting recipes, that you will use again and again is for very hard to do when it comes to cold broccoli salads that do not include mayonnaise.  This salad is stand alone good or you can add the bacon.  Think of this as the, “just let me take one more bite”, kind of salad.  In the summer we are all about  no worries, no fuss, no leftovers to take home from the potluck kind of dish.  Let coworkers, friends, and family be impressed that healthy can taste this darn good.

The blend of flavors pair perfectly with grilled meat or a fork for an afternoon snack at work.

I love using avocado oil for salads.  It is light tasting and does not leave a oil slick in your mouth.

Hungarian yellow peppers are generally an easy find at most grocery stores.  This is the first year that I have concentrated on utilizing them.  They have a light taste and are not over bearing like our traditional bell peppers.

Ingredients
  • 2 ears sweet corn
  • 1 clove garlic crushed
  • 1 whole Hungarian yellow pepper diced
  • 1/4 cup pumpkin seeds roasted
  • 1.5-2 cups broccoli, raw chopped in to bite size pieces
  • 1/2 lime squeezed
  • 3/4 teaspoon avocado oil
  • 1/2 teaspoon honey
  • 1/4-1/4 teaspoon sea or kosher salt
  • 2 pieces bacon cooked and crumbled---optional
Instructions
  1. Take the kernels off the ear of corn. Place in a medium dry skillet over medium heat, until golden and browning. Take off heat and allow to cool. This will take under 10 minutes.


  2. In a small bowl mix the lime juice, avocado oil, honey, and salt.

  3. Combine in a medium size bowl add the sweet corn, garlic, Hungarian peppers, pumpkin seeds, and broccoli. Toss well.

  4. Pour the dressing mix over the vegetables and mix well. Can serve immediately or it will keep for a few days refrigerated.
Recipe Notes

This makes about 2 cups of salad.

If you want to make more: simply double each ingredient and add the salt as desired. 

For variations on seasonings, you can sprinkle a little of the following seasonings:

Smoked paprika

Cumin and chile powder

Trader Joe’s Chili and Lime Seasoning mix
